10.2.3.2. The refrigerated room or compartment prescribed in subparagraph 2 of the first paragraph of section 10.2.3.1 must contain equipment able to maintain the temperature at between 0ºC and 4ºC.
The refrigerated room or compartment prescribed in subparagraph 3 of the first paragraph of section 10.2.3.1 must contain equipment able to maintain a temperature of not more than 7ºC, except where the remains of freshwater fish not intended for human consumption are removed daily from the room or compartment.
The operator of a slaughtering and gutting shop must have a metal temperature probe, in working order, whose numerical scale accurately indicates the internal temperature of foods to within 1ºC.
